Sometimes my grandmother would take leftover mashed potatoes and make pancakes out of them. They were always so good. I’d always wanted to make them myself but would never have the necessary amount of mashed potatoes on hand. When I started buying potato flour, I wanted to find a recipe to make the pancakes using potato flour rather than leftover mashed potatoes. I searched online until I found a recipe for making breakfast pancakes with potato flour. The recipe used spices like cinnamon to add flavor. I didn’t desire that kind of flavoring at all. I decided to write down the recipe, leaving out those flavorings, and add my own savory flavorings like garlic powder, onion powder, and Italian seasoning. I also made the pancakes using just the base recipe, without the extra spices/seasonings, and they turned out great that way too. Find your own flavorings and seasonings to add to make this recipe your own!
Ingredients
- 2/3 cup potato flour
- 1 tsp baking powder
- 2 tbsp melted butter or oil such as olive or canola
- 1.25 cup milk
- 1 egg
- savory seasonings such as garlic powder, onion powder, Italian seasoning, etc. to taste
Instructions
- Combine ingredients in a mixing bowl.
- Stir until thoroughly combined.
- Form mixture into balls.
- Flatten balls to desired thickness.
- Place pancakes into a greased skillet.
- Cook on each side until done.
